The word “whiskey” is an Anglicisation of uisce beatha or uisge beatha, a phrase from the Goidelic branch of languages (Irish, Scottish Gaelic and Manx) meaning “water of life”
Most Irish pot still whiskey is distilled thrice, Peat is rarely used in the malting process, so that Irish whiskey has a smoother finish to Scotch. An exception is is Connemara peated Irish malt (double distilled) whiskey
Irish whiskey was once the most popular spirit in the world.
The Irish Whiskey Act of 1980 makes the production process relatively simple:
– Irish whiskey must be distilled and aged on the island of Ireland; that is, either in the Republic of Ireland or Northern Ireland.
– The contained spirits must be distilled to an alcohol by volume level of less than 94.8% from a yeast-fermented mash of cereal grains.
– The product must be aged for at least three years in wooden casks.
– If the spirits comprise a blend of two or more such distillates, the product is referred to as a “blended” Irish whiskey.
There are several types of whiskey common to Ireland, including those referred to as “single pot still”, “single malt”, “single grain”, and “blended”.

We are fortunate to have a large, light and airy function room at The Earl Spencer. This space is completely self-contained from the pub downstairs as it has its own private entrance from the street, its own kitchen and bar and dedicated toilet facilities. This makes it a very popular for private meetings and hospitality as it minimises the risk of disturbance from external elements.
It is a versatile space which can accommodate up to 72 guests for a seated function and up to 100 for a mainly standing event.

“I just wanted to say a huge thank you for a lovely evening! So many guests commented on how lovely the room and pub were and some even asked about hiring the function room for their own up and coming events. Gabriel was a fantastic barman, he was full of energy and was lovely! As was Jimmy who helped to clear up at the end of the night! The food was soooo yummy too – again people were asking me about the food served daily in the pub!
Again, we all had such a brilliant night so thank you to yourself and the Earl Spencer family!

“A quick thank you to you and your team for making my birthday party yesterday a great success. The room was decorated beautifully, your staff were so helpful and the food was very tasty. I had many compliments from my guests who thought your pub was fabulous. I thought the band was fantastic – thank you again for accommodating them.
